Five days before the dinner I put 3 large cartons of full milk organic
yogurt in a thin cloth in a sieve and tossed out the whey after turning
the curd several times. It was shaped in a bowl and turned out, then
I pressed a variety of herbs into the sides. I usually add stuff to the
cheese, but I knew I would have a lot left over and I would use it to
make ice cream, so I definitely didn't want garlic added to my future
chocolate ice cream. The ice cream turned out pretty good, too.
